Banana Berry Mini Muffins

INGREDIENTS
2 cups self-raising flour 1/2 cup caster sugar
2 eggs 1/3 cup vegetable oil
1 cup sour cream 1 mashed banana
1 cup berries (fresh or frozen)
METHOD
Preheat the oven to 180°C (fan-forced).
Grease/oil a mini muffin tray.
In a mixing bowl, combine all of the ingredients.
Put the mix into the prepared cake tin.
Cook for 20 mins or until golden.
Great for lunchboxes, fine to freeze for up to three months.
