Maple Coconut Granola

INGREDIENTS
2 cups rolled oats 1 cup mixed nuts/seeds (I use slivered almonds, crumbled
1/2 cup shredded coconut walnuts, pepitas & sunflower seeds
2 tsp ground cinnamon 1/2 tsp sea salt flakes
2 tbsp coconut oil (I use MCT, but normal melted is fine) 1/4 cup maple syrup
1/3 cup dried currants (you can use any dried fruit)
* to serve (options): yoghurt, berries, etc.

METHOD
Preheat the oven to 150°C.
Line a baking tray with baking paper.

In a mixing bowl, combine all of the ingredients except the currants.

Put the mix onto the prepared baking tray, spreading it out so it’s a consistent height.

Bake for 15 minutes, rotating the tray half way through to ensure consistent cooking.

Use a spoon or fork to break up the mixture a bit, then bake for another 7-10 mins (until golden brown).

Take it out of the oven, then mix through the currants. Leave to cool, then put into a container.

Lasts 7-10 days in an airtight container.
