Tray Bake Spicy Steak Tacos with Mango Salsa

Serves 4.

INGREDIENTS
600g beef steak (I used rump) 1 tbsp sesame oil (or a low-flavoured oil like vegetable)
1 tbsp minced garlic 2 tbsp sliced pickled jalapeños
1/2 tbsp chilli powder Tortillas (I used flour, not corn, but either is fine)
1 tbsp onion powder 1 mango, diced
1 tbsp paprika 1/2 red capsicum, diced
1/2 cup orange juice (pulp free) 1 cup grape tomatoes, halved or quartered
1/4 cup soy sauce 2 tbsp lime juice
1 tbsp honey 1/4 cup chopped coriander
* to serve (options): pickled onions, feta, avocado, shredded lettuce

METHOD
Preheat the oven to 240°C.
Line a baking tray with baking paper.

In a small bowl, combine the garlic, chilli powder, onion powder, paprika, orange juice, soy sauce, honey & oil. Once combined, cover the steak in the mixture. If you have enough time, you can also let the steak marinate for 15-30 minutes. Put the marinated steak on the prepared baking tray.

Scatter some jalapeños around the steak on the baking tray. Cook for approx 10 minutes. Switch the oven to grill and cook for another 2-5 minutes, or until the meat starts to caramelise.

While the steak is cooking, prepare the mango salsa by combining the mango, capsicum, tomatoes, lime juice and coriander. If you like extra spice, add some jalapeños here also.

Remove the steak from the oven, thinly slice it, and toss it through the remaining sauce (from the tray) again.

Warm up your tortillas, then fill them with the sliced steak, mango salsa and any additional options*.

To adapt for the kids: keep some steak aside and cook separately, without the marinade.
