Chilli Fish Stir Fry with Noodles

Serves 4.
20 Minutes.
4/5 Adjustable for the kids.

INGREDIENTS
1 tbsp sesame oil 1 tbsp soy sauce
1 tbsp minced garlic 2 tbsp sweet chilli sauce
1 tbsp minced ginger 1/4 tsp chilli flakes, if desired
500g firm white fish (I used basa) Fresh coriander
400g noodles (I used hokkien) 1 bunch baby bok choy, chopped
100g snow peas, sliced 1 bunch baby broccoli, chopped
* to serve (options): sesame seeds, fried shallots, chilli flakes, coriander, sliced spring onions, lime wedges.

METHOD
Heat the oil in a non-stick wok or large fry pan over medium-high heat.

Add the garlic, ginger and fish, and stir fry until the fish is almost cooked through. Transfer to a plate or bowl.

Meanwhile, cook the noodles according to packet directions. Drain.

Add the snow peas and broccoli, and stir fry for 2-3 minutes or until tender. Add the bok choy, noodles, soy sauce, sweet chilli sauce and chilli flakes; and stir fry until the bok choy is tender, approx 2 minutes.

Return the fish to the pan and stir fry until combined and heated through again.

Divide amongst plates and add any additional garnishes*.

To adapt for the kids: wait until after the fish has been to add the sauce, and set some aside for the kids without the sauce.
